Fruit Salad

The best dessert to have in summer is eating fruits. It keeps us cool and satisfied for a long time. Fruits have high nutritional values and a very good source of healthy diet. They should be rinsed properly before cutting or eating. You need to eat variety of fruits everyday and trying out new fruits with different colors provides a wide range of nutrients. They are excellent source of healthful diet and a strategy to weight loss. Fresh fruits are easy to eat on-the-go which in return provides high levels of energy.



Ingredients

Apple                1 
Bananas            2
Mangoes          2
Strawberries   8
Raspberries     10
Blueberries      1 1/2 cups
Watermelon     2 cups scooped cubes
Milk                    1 cup
Sugar                 to taste (optional)
Lemon               1 squeeze juice in a small bowl

Method

  • Wash and rinse apple, mangoes, strawberries, raspberries, blueberries and keep aside.
  • Chop apple and mangoes to small cubes. Cut the bananas into rounds. Cut the tip leaves of the strawberries and slice them thinly. Keep all the fruits aside.
  • In a mixing bowl, add one after the other all the fruits and toss them once.
  • Now add lemon juice and sugar to taste. Toss again till all the fruits are mixed well.
  • Top it off with milk and combine. Chill before serving.
  • Yummy Fruit Salad does wonders to both kids and grown-ups.
Note: 
  1. Fruit variations can be easily done according to ones taste preferences.
  2. Pineapple, Lime, Orange, Cherry, Grapes and any other fruits can be mixed depending on the choice.

Orange Jello

Jelly is one of a kind desserts, a translucent solid substance. They can be mould into different shapes. Jell-O's could be set in a personalized mould and turn out to be a party hit. It's an ultimate pudding for kids to be served in summer. It's pretty easy to make and pretty easy to gulp. Once it's out of the chilled temperature, kids won't wait. Bowls will be cleaned within no time.



Ingredients

Gelatine                 9 gms.
Hot Boiled Water    1 cup
Cold water             1 cup

Method
*********
  • Take gelatine in a bowl and add boiling water and stir continously for 2 mins. until the powder is dissolved.
  • Now pour cold water and stir for a min. Let the powder combine well with the water.
  • Now refrigerate for about 3-4 hours until firm.
  • Keep it chilled and take out before serving.
  • Jell-O is wiggly wobbling all around the tray.

Glazed Walnuts

It will be great fun to create delicious and nutritious desserts at a short notice, where the flavors are combined. Caramelized dessert casserole is easy to prepare and store.




Ingredients
%%%%%%%%

Walnuts      1 cup
Sugar          1/2 cup

Method

  • Take a casserole and grease it properly.
  • Toss in walnuts halves and sugar in the casserole. Add 1/4 cup water to it and combine well.
  • Microwave for 4 mins. and stir in between. Again microwave for another 4 mins. till the sugar has caramelized, stirring several times in between to avoid burning or sticking.
  • Once it's done, pour the mixture into a greased dish and let it cool completely.
  • Sugar glazed walnuts are ready to eat and can be stored in an air tight container.

French Toast

French Toast is a breakfast food. Typically it is made with bread and eggs. This versatile dish is often topped with butter, sugar, syrup or fruits. This can be taken as a dessert too. Usually it's suggested that the bread should be thick sliced such as challah, english muffin bread, cinnamon swirl bread or raisin bread. In this recipe I've used wheat bread.



Ingredients

! Bread Slices                      8
! Eggs                                      3
! Unsalted Butter               to brush
! Reduced Fat Milk           1 cup
! Sugar                                    to sprinkle

Method
!!!!!!!!!!!
  • Break the eggs into a bowl and beat them lightly with a whisk. Add milk and whisk until smooth. Keep aside.
  • Pour the egg mixture into a flat bowl and place the bread slices into the beaten batter. Turn and coat well both sides of the bread slice and let stand in a plate till the liquid is absorbed.
  • Now preheat the grill and brush with small amount of butter and when the grill is hot place the bread slices on the grids.
  • Toast on only one side and once it's toasted take out in a serving plate. Cut into triangles and serve hot.
  • Serve hot French Toast with unsalted butter and sprinkle sugar on top.

Pineapple Mango Mousse

Typically mousse is made from cream and egg . It's a light and creamy dessert . Mousse is derived from French which means "foam" . Mousse is usually a combination of different flavors from pureed fruits to chocolates . It's texture is light and fluffy to creamy and thick . In this recipe I didn't use egg...it's a veggie version of mousse.



Ingredients

! Mango Puree                 30 oz.
! Sugar                              1/2 cup
! Light Cream                   2 cups
! Water                              1 cup
! Pineapple Gelatin          3 oz.

Method
!!!!!!!!!!!!!
  • Pour cream in a bowl and whisk well . Add sugar and let it fluff till creamy texture . Once creaminess is attained keep it aside . ( Instead of light cream you can as well use heavy whipping cream to get thicker cream and also instead of whisk you can even blend in a blender till creamy texture is attained . )
  • Now in a skillet pour mango puree and water . Let it warm on low flame . Keep stirring in between . Once it comes to a boiling point , turn off the heat .
  • Add pineapple gelatin and mix well . Leave it to cool down to room temperature.
  • Once the mixture comes to room temperature , add the beaten cream and mix . Fold the cream and the puree well .
  • Now in a serving tray sprinkle tuti fruity and pour the creamy puree and level it.Sprinkle few more of the tuti fruity and set it in the fridge for 4 hours.
  • After 4 hours Pineapple Mango Mousse is ready to be served . Take out in a serving bowl .
  • Serve Chilled Pineapple Mango Mousse topped with few tuti fruity as a dessert.

Qubani Ka Meetha

Qubani Ka Meetha is a very popular dessert of Hyderabad.This dessert is made from dried apricots.Apricot means "Qubani" in Urdu.So as the name says Qubani Ka Meetha means Apricot Sweet Dessert.A Hyderabadi grouping is never complete without this glorious sweet dish.It's rich and creamy texture makes a sweet indulgence to this dessert.This dessert helps in easy digestion after savoring splendid spicy rich Hyderabadi Biryani.Savour the delicacy of the rich dessert Qubani Ka Meetha.I love this dessert to the wholesome.No more words to explain..........Classic Rich Creamy Dessert.We had a neighbourhood gathering on Valentine's Day.... It was pot luck, and I had a choice of making this awesome dessert.As it's Valentine's Day, I sprinkled in a pinch of red food color with nuts decorated as heart shape and vola!....here it is Hyderabadi Classic Rich Dessert "Qubani Ka Meetha".



Ingredients

! Dry Apricots                     7 oz.
! Sugar                                2 cups/as per your taste

Method
!!!!!!!!!!!!
  • Wash the apricots and soak them overnight in a deep bowl. Next day the apricots will be swelled up.Take the apricots out of water and slit them to remove the seeds.Once all the seeds have been removed keep the slitted apricots in one bowl and the seeds in another.
  • Now wash and clean the seeds.Crack open the seeds to find apricot nuts in them.Place all the nuts in a bowl and keep aside.Take half of the nuts and crush them and store the remaining nuts and use them later.
  • Take half of the slitted apricots and blend till pureed.Keep the remaining as it is.
  • Once pureed,pour the pureed mixture and the remaining slitted apricots into a large saucepan and boil for 10 mins.Now add in sugar and cook on medium flame for 20 mins.Once it gets to thick consistency, taste and if needed add more sugar.The more sugar added the more sweeter.Once it turns to thick and paste consistency sprinkle the crushed nuts and turn off the heat.
  • Garnish nuts as desired and serve this incredible dessert with fresh cream or a dollop of vanilla ice cream.
